Predictive text is one of the typing features that Apple lets you switch off and on in the keyboard settings. Both switches for it are on when the iPhone is new.
The screenshots show iOS 26.5 on an iPhone 17. On older versions the rows have the same names, with a slightly different look.
Step by step

Open Settings and tap General
General is the first row of the first group in the main Settings list.

Tap Keyboard
It is in the second group of the General page, below Fonts.

Switch off Predictive Text
It is under the heading All Keyboards, below Auto-Correction. In the picture it is on.

Decide about Show Predictions Inline
This is the next row. Switch it off as well if you do not want predictions shown in the line you are typing.
Good to know
Autocorrect is a separate switch on the same page: how to turn off autocorrect on iPhone.
In short: Settings, General, Keyboard, Predictive Text off.
