For one video, tap the video, the gear and Captions, and pick a language. To change their size and style, open YouTube Settings, Captions: it opens Android's Caption preference, where Caption size and style sets the text size.

Step by step

Turn on captions in the player
Tap the video, then the gear. Captions shows the track; ours offered English (auto-generated).

Open caption settings
In YouTube tap You at the bottom right, then the gear at the top right. Tap Captions.

Use Caption preference
This is Android's page. Show captions switches them on in apps that follow it. Tap Caption size and style; ours was Normal, White on black.

Change the text size
Text size and Caption style are here, with a preview at the top.
About this guide
YouTube does not have its own caption size setting on Android. It uses the phone's caption preferences, which also apply to other apps.
The screenshots are from the YouTube app, version 21.39.522, on a Samsung Galaxy A57 5G with Android 16 and One UI 8.5, in dark mode. Other people's videos, ads and comments are blurred.
Good to know
The note on the Caption preference page says captions set in an app such as YouTube are applied first, and not every app follows these settings.
In short: Player: gear, Captions. Size: YouTube Settings, Captions, Caption size and style, Text size.
