How to use two numbers on an iPhone with Dual SIM

Add the second plan as an eSIM, then open Settings, Mobile Service. Give each line a label, choose the Default Voice Line for calls, and tap Mobile Data to choose which line is used for the internet. iPhone XS, XR and later support this.
Dual SIM gives one iPhone two phone numbers, for example a private and a work number, or your home number plus a local data plan when you travel. Both numbers can receive calls.
The pictures are simplified diagrams of the iPhone screens, not screenshots, so yours will look a little different.
Step by step
Add the second plan
Most second lines are eSIMs, which you add under Settings, Mobile Service, Add eSIM. Background: what is an eSIM?
Label the two lines
In Settings, Mobile Service, tap a number, then Mobile Plan Label, and choose a label such as Personal, Business or Travel. In some regions the menu is called Cellular.
Choose the default line
Tap Default Voice Line and pick the number used for calls and messages to people who are not in your contacts.
Choose the line for mobile data
Tap Mobile Data and select one line. Only one line provides data at a time.
Pick a line for a single call or message
In the Phone app, tap the line shown near the top of the keypad, or the info button next to a contact, and choose the other number. In Messages, start a new conversation and tap the number shown to switch.
Good to know
"Allow Mobile Data Switching", on the Mobile Data page, lets the phone use data from the other line while you are on a call. Switch it off abroad if the other line would roam at high cost.
While you are on a call on one line, a call to the other line goes to voicemail unless Wi-Fi calling is set up for it.
iPhone 13 and later can use two eSIMs at the same time, without any physical SIM.
The status bar shows the signal of both lines.
