How to update your Apple Watch

Put the watch on its charger with at least 50% battery, keep the iPhone next to it on Wi-Fi, open the Watch app on the iPhone and go to General, Software Update. Tap Download and Install.
watchOS updates bring new features and security fixes. An update can take from 20 minutes to over an hour, and the watch cannot be used while it installs, so the evening is a good time.
Update the iPhone first. A new watchOS version needs the matching iOS version on the phone.

Step by step
Update your iPhone first
On the iPhone, open Settings, General, Software Update and install what is offered.
Put the watch on its charger
The watch must be on the charger and at 50% or more for the installation to start. Keep the iPhone close and connected to Wi-Fi.
Open the Watch app and tap General
On the iPhone, open the Watch app and stay on the My Watch tab.
Tap Software Update
The iPhone checks for a new version of watchOS.
Tap Download and Install
Enter your passcode if asked. A progress ring appears on the watch. Leave it on the charger and do not restart either device until the watch restarts by itself.
Good to know
You can also update on the watch itself when it is on Wi-Fi: open Settings on the watch, then General, Software Update.
Switch on Automatic Updates on the same page and the watch updates overnight while it charges.
If the update is stuck on "Preparing", restart both the watch and the iPhone and try again. Deleting the downloaded update file in the Watch app and starting over also helps.
