Short answer

Open the Heart Rate app on the watch. The large number is your current heart rate in beats per minute. Turn the Digital Crown to see your resting rate, walking average and the range for the day.

The watch measures your pulse through the sensor on its back, all day in the background and continuously during a workout. The Heart Rate app shows the latest values.
